Yields: 10 to 12 3-inch cookies
INGREDIENTS
• 3/4 cup all-purpose flour
• 1 teaspoon all-purpose baking powder
• 1/2 teaspoon ground cinnamon
• 2 tablespoons egg substitute
• 1/3 cup apple juice concentrate
• 2 tablespoons brown rice syrup
• 1 teaspoon vanilla extract
• 1 teaspoon canola oil
• 2 tablespoons raisins
• 1 small apple, peeled, diced in 1/2-inch pieces
• 2 tablespoons cereal nuggets
DIRECTIONS
PREHEAT oven to 375° F (190° C). Spray a baking sheet with No Stick cooking spray.
COMBINE flour, baking powder and cinnamon in a medium-size bowl.
ADD egg substitute, apple juice concentrate, brown rice syrup, vanilla and oil. Mix thoroughly.
ADD raisins, apple and cereal nuggets.
DROP by tablespoons on sprayed baking sheet. Bake about 10 minutes, or until golden brown.
COOL and serve. Cover and refrigerate leftovers.
