1/4 cup shortening
4 ounces (1/2 cup) unsweetened applesauce
1 large egg
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 1/2 cups old-fashioned oats
3/4 cup plus 2 tablespoons Splenda, No Calorie Sweetener, granular
2 tablespoons (packed) light brown sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
Nonstick cooking spray

Preheat oven to 375°F. Combine shortening, applesauce, egg, and vanilla with mixer. Add flour, oats, 3/4 cup Splenda, brown sugar, soda, salt, and cinnamon, and mix until soft dough forms. Spray a baking sheet with nonstick cooking spray. Drop heaping teaspoons of dough onto baking sheet. Pour remaining 2 tablespoons of Splenda onto a small saucer. Dip a slightly moistened, flat-bottom drinking glass into the Splenda, then gently press each dough ball to flatten slightly. Bake for approximately 10 minutes until cookie bottoms are light brown. Cool and store in a tightly sealed container.

Preheat oven to 350°F. In a medium bowl, blend flours, 1/2 cup oats, 1/2 cup brown sugar, and 1/3 cup margarine. Press mixture into the bottom of a 9? x 13? pan. Combine remaining 1/2 cup oats, 1 cup brown sugar, and 2 tablespoons margarine with salt, cream of tartar, cinnamon, nutmeg, and cloves and mix. Add apples and nuts, tossing to coat. Spread mixture evenly on top of first layer. Bake until brown, 40 to 45 minutes. Cool and cut into bars.

Chocolate brownie ice cream pie
2/3 cup (4 ounces) semi-sweet chocolate chips
1 tablespoon instant coffee
2 tablespoon boiling water
4 eggs, separated
1/3 cup sugar
1 teaspoon vanilla
1/8 teaspoon salt
Fine, dry bread crumbs for dusting the pie plate
1 quart low-fat frozen yogurt, or low-fat ice cream, softened in refrigerator 15 minutes
1/4 cup chocolate cookie crumbs

Preheat oven to 350°F. Spray a 9-inch pie plate with nonstick cooking spray and dust with fine bread crumbs.

Place the chocolate in the top of a double boiler over hot (not boiling) water. Dissolve the instant coffee in the 2 tablespoons boiling water and add to chocolate. Stir occasionally with a wire whisk. When the chocolate is almost melted, remove from heat and whisk until smooth. Meanwhile, using a mixer, beat egg yolks until thick. Gradually beat in the sugar until the mixture is thick and lemon-colored, about 5 minutes. Gradually beat the chocolate and vanilla into the yolk mixture.

In a separate bowl, beat the egg whites and salt until stiff but not dry. Stir one-third of the whites into the chocolate mixture. Gently fold in the remaining whites until blended.

Pour chocolate mixure into prepared pie plate. Bake for 25 minutes. Remove from oven and cool completely on a wire rack. As it cools, the mixture sinks in the middle to form a thick fudgy pie shell.

Spoon the softened frozen yogurt into the cooled shell. Smooth with the back of a large spoon. Sprinkle with cookie crumbs and freeze until ready to serve.

Dark & divine chocolate sauce
3/4 cup sugar
1/2 cup water
1/2 teaspoon fresh lemon juice
1/3 cup plus 1 tablespoon unsweetened cocoa powder
1 tablespoon butter
1/2 teaspoon vanilla extract

In a small saucepan, combine the sugar, water, and lemon juice. Cook over medium heat, stirring with a wooden spoon until the sugar dissolves. Increase the heat to high and bring the syrup to a boil. Boil for 1 minute.

Remove the pan from the heat. Whisk in the cocoa powder and butter until blended and slightly thickened. Cool to room temperature. Strain into a serving bowl and stir in the vanilla. Cover with plastic wrap and refrigerate until ready to serve. The sauce will keep up to 2 weeks in the refrigerator. Makes about 1 cup sauce.

Ovaltine is a brand of milk flavoring product made with malt extract (except the blue packaging in the US), sugar (except in Switzerland), and whey. Some flavors also have cocoa. Ovaltine, a registered trademark of Associated British Foods, is made by Wander AG, a subsidiary of Twinings which acquired the brand from Novartis in 2003, except in the United States, where Nestlé acquired the rights separately from Novartis later on.

History

Ovaltine was developed in Berne, Switzerland, where it is known by its original name, Ovomaltine (from ovum, Latin for “egg”, and malt, originally its main ingredients). Soon after invention the factory moved out to the village of Neuenegg a few kilometers west of Berne, where it is still produced.

Ovomaltine was exported to Britain in 1909; it was a misspelling in the trademark registration that led to the name being shortened to Ovaltine in English-speaking markets. A factory was built in Kings Langley which exported to the United States as well. By 1915 Ovaltine was being manufactured in Villa Park, Illinois, for the US market. Originally advertised as consisting solely of “malt, milk, eggs, flavored with cocoa”, the formulation has changed over the decades, and today several formulations are sold in different parts of the world.
